The most important thing is that you want all the fries to be hot at the end, so you need to cook them all at once! I put them on 3 trays in even layers, with 2 types of fries per tray.

Your specific recipe will vary based on the exact types of fries you buy — but the general guidelines are:
β’ Put all the fries in at once, at a common temp (I did 425 degrees since most of my fries needed that temp or higher)
β’ Add about 10 minutes to the total cook time (since there are a lot more fries in there at once)
β’ Arrange fries in single layers on the pan, half a pan for each type (so, 3 pans = 6 types of fries). Flip the fries halfway through cooking, as you normally would
β’ Monitor them toward the end of the cook time, removing each type as it's ready and putting the others back in
β’ While the fries are cooking, you can plate your sauces on the board. That way, everything will be ready as soon as the fries are done and you can eat them while they're hot!

That’s it! No exact science. The most important part is cooking them all together so they’re hot at the end. And picking great sauces, of course.
